This is the way she cooks. I have been relishing this from childhood and since I miss it I follow her recipe and my husband also loves this and each time he eats he goes down his childhood memory lanes of his maternal aunt. It has slightly bitter taste and is a popular Bengali Vegetable cuisine in West Bengal and neighboring country Bangladesh. The main spice used here is #Radhuni, ( some people skip it ). The main vegetables are potato, sweet potato, drumstick, banana, brinjal, Bittergourd and Bodi ( sun dried lentil Dumlings) which is a must, others like Radish, papaya, flat beans and long beans can be added if available. It is prepared in different ways some use mustard paste too but my recipe does not. Recipe differs a bit in every household. #post17

Ingredients and spices that need to be Take to make Dudh Shukto- (A healthy & Nutritious Veg Curry Soup):

  1. 1 Sweet potato (150 gms)
  2. 150 gms Brinjal / Egg plant
  3. 1 (90 gms) Karela
  4. 1 small Papaya (200 gms)
  5. 1 Green Raw Banana
  6. 1 Potato (200-250 gms)
  7. 1-2 inches Ginger
  8. 1-2 Green chillies
  9. 1 Tsp Radhuni Powder (or grind along with ginger & chilli)
  10. as required Few Urad Dal Bori/Bori/ Wadia/ Wadiya/ Wadi
  11. as needed Mustard oil to fry the vegetables
  12. 2 Tbsps Ghee
  13. as needed Salt
  14. as needed Generous pinch of Sugar
  15. As needed Turmeric a pinch-to coat the brinjal along with little salt only
  16. Whole spices (4 spices)
  17. 1/2 Tsp Whole Radhuni
  18. 1/4 tsp Methi seeds
  19. 1-2 Bay leaves
  20. 1 Whole Red dry Chilli (optional)
  21. 1/2 tbsp Paanch Phoran dry roasted and grinded into powder
  22. 1 cup milk with 1/2 tbsp Maida
  23. as needed Water
  24. Other veggies you can add, if you have
  25. As per requirement Flat Broad Beans
  26. as required Radish
  27. as required Long Beans

Steps to make to make Dudh Shukto- (A healthy & Nutritious Veg Curry Soup)

  1. Prepare the vegetables as seen in picture - all has to be cut lengthwise. Soak the vegetables in water otherwise it will become black due to oxidation except the Karela, brinjal and drumstick. Apply turmeric powder and salt to the brinjal (or you can skip this)
  2. Start by frying the vegetables (except drumsticks) first with any of the vegetables like potato, sweet potato, papaya and banana. If you like you can skip frying these vegetables but you must fry the brinjal and Karela. Do the Karela at last, in the remaining oil,fry the Bodi / bori till it is brown.
  3. Grind the ginger, chilli and Radhuni together or you can powder the Radhuni seperately and grind the ginger and chilli together. Dry roast the Paanch Phoran and grind it.
  4. Keep the milk and maida ready.
  5. Take a tablespoon of oil (use the same oil in which vegetables were fried) and heat it. Add the 4 whole spices, once it crackles add the ginger and chilli paste and then add the vegetables which takes time to cook like the potato, sweet potato, banana first and then the papaya and the drumsticks.
  6. After adding drumsticks, add the Powdered Radhuni and salt too, mix well and add water and let the vegetables cook. When the vegetable is almost cooked, add the brinjal and Karela and cook till all vegetables are cooked well. Then add the milk mixed with maida and mix well. Adjust the consistency, if required add more hot water. Cook for about 5 minutes or so.
  7. Then atlast add the sugar, dry roasted Paanch Phoran powder, ghee and the fried Bodi and mix well with gentle hands otherwise the vegetables might get smashed. Cook for few minutes and your Sukhto is ready to be served with hot steamed rice. The more it cools it thickens up so have it hot. Enjoy !
